Easy Bushman Bread Recipe

I wanted a healthy hearty bread to go with dinner on Sunday, but because I was going to be gone for 3 hours I wanted something that would hold up to a long rise.  This worked perfectly.



Easy Bushman Bread

1 1/2 cup warm water
2 Tbsp butter, softened
1/2 cup honey
2 cups wheat flour
2 cups bread flour
2 Tbsp sugar
2 Tbsp cocoa powder
1 tsp salt
3 Tbsp cornmeal, plus some for dusting
2 1/4 tsp yeast

Place ingredients in the following order into a bread machine on the dough cycle: water, butter, honey, bread flour, wheat flour, cocoa, sugar, salt, cornmeal, and then yeast.  Run the bread maker on the dough cycle until complete.

Grease a large glass or plastic bowl and transfer the dough turning to coat.  Cover and let rise 1-3 hours.  Preheat your oven to 350 F.  Separate the dough into two equal parts and shape into oval loaves.  Place on a baking sheet dusted with cornmeal, and then dust the top with additional cornmeal.

Bake for 20-25 minutes or until the crust makes a hollow sound when tapped.


I shaped mine too large and more like circles so it took about 45 minutes to bake.  If you make them thinner and long more like a baguette they will bake quicker.
