Ginger-Molasses Cookies

Ginger and Molasses are some of our favorite flavors, and I am always up for trying new recipes to see how they taste but I always seem to come back to this recipe.


Ginger-Molasses Cookies

2 1/2 cups all purpose flour
1 tsp ground ginger
1 tsp cinnamon
2 tsp baking soda
1/2 tsp salt (I use Kosher)
3/4 butter, softened
1 cup brown sugar, packed
1 egg
1/3 cup molasses
1/2 cup sugar

Combine flour, ginger, cinnamon, baking soda and salt.  In a separate bowl beat together butter and brown sugar until light and fluffy; beat in egg and molasses.  Gradually add flour mixture just until mixed.  Chill dough until firm, about one hour.  Preheat oven to 350 F.  Shape chilled dough into one inch balls, (small scoop) and roll in sugar, then place on an un-greased baking sheet. Bake for 8-10 minutes for gooey soft cookies or 15 minutes and golden for crispy crunchy cookies.  Cool on the baking sheet for 2 minutes, then move to wire racks to completely cool.
