Chocolate Drizzle Biscoff Cookies

If you haven't figured out by now I love cookies.  I could eat them everyday and not feel bad about it. I am loving the Biscoff spread I found a few months ago and was excited to make more yummy cookies with it!  This is what I came up with.  Tell me what you think!  I left some plain for my son who doesn't like chocolate (I know he's not right in the head :)) and they were delicious that way too.


Chocolate Drizzle Biscoff Cookies

1/2 cup butter, softened
3/4 cup biscoff spread
1/2 cup granulated sugar
1/2 cup dark brown sugar
1 egg
1 tsp vanilla extract
1/2 tsp kosher salt
1/2 tsp baking soda
1 3/4 cup flour
1/2 cup dark or semi-sweet chocolate chips
1 tsp shortening or butter

Preheat oven to 350 F. Cream the butter, biscoff spread, sugar, and brown sugar for 2-3 minutes.  



Add the egg and vanilla and beat well until the mixture is light and fluffy.  In a separate bowl combine the flour, salt, and soda.  


In two additions add the dry ingredients to the sugar mixture just until the flour is incorporated.  


 Use a medium scoop to transfer the cookie dough onto an ungreased baking sheet. 


Bake for 8-10 minutes until set and the bottom is brown.  Let cookies cool on the pan 2-3 minutes and then transfer to a cooling rack.


In a double boiler add the chocolate chips and shortening and melt until a smooth consistency.  Or to melt the chocolate in the microwave add the chocolate and shortening or butter to a glass bowl, heat for 30 seconds and stir.  



Then heat for 10-15 second intervals stirring each time until the chocolate is smooth.  


Drizzle the chocolate over the top of each cookie. 

Wait until the chocolate is set.  Or just dig in because you can :) These cookies are fabulous with or without the chocolate!

Store in an airtight container. 
These are some I gave to some friends.

  6. Miss Emma. Biscoff is a spread about the same consistency of peanut butter. It is found on the grocery aisle right next to the PB and Nutella. Not every store has it but Walmart has it... The spread tastes like the little Gingerbread Biscoff cookies that Delta passes out on it's airline. Check it out when you get a chance, it is yummo!
