How to Lose Weight with Delicious Chicken Recipes

Grilled or poached chicken breasts are not the only option you have when you’re on a diet. There are countless delicious chicken recipes you can easily make at home in under an hour that are low in calories and may even help you burn stubborn belly fat.Inspired by various gourmet recipes and cuisines including Greek, Japanese, Thai, Chinese, Italian, French, and Mexican, you can make a different chicken recipe everyday of the week and not wear out your taste buds.

To cut out the fat and calories, opt for skinless or boneless chicken breasts and low-caloriegourmet recipes. Choose a chicken recipe that uses healthy cooking methods like baking, broiling, roasting, poaching, steaming and sautéing in healthy oils instead of deep-frying. Also use low-fat and healthy ingredients including vegetables, herbs, spices and fruits, and stay away from heavy creams and butter. To fight belly fat, include ingredients high in monounsaturated fatty acids such as nuts, seeds, olives, avocado, and healthy cooking oils. 

Mediterranean
For a quick Mediterranean meal, sauté chopped onions, garlic, and rosemary in olive oil over medium heat in a skillet until tender and add (one-inch) cubed boneless and skinless chicken breasts and season with salt. Cook the chicken until no longer pink, about five to seven minutes then add pitted and sliced Kalamata olives and halved cherry tomatoes. Reduce the heat to medium low and cook for about four minutes more and serve with couscous, rice, bread or quinoa.

Chinese
For a delicious and healthy Chinese-inspired dish, stir-fry sliced chicken breasts together with vegetables such as broccoli, carrots, and bokchoi, and season with soy sauce, ginger, garlic, lemon juice, and sesame oil, garnish with lightly toasted cashews and serve over noodles or rice. You can also add cubed firm tofu and oyster or shiitake mushrooms for a more nutritious dish.

Thai
Make a quick Pad Thai and toss together cooked flat rice noodles together with sautéed chicken breasts, bean sprouts, strips of fried scrambled eggs, chopped peanuts, and fresh cilantro seasoned with fish sauce, peanut butter, sugar, and red chili flakes.

Mexican
Make sizzling Fajitas with leftover cooked chicken breasts for a quick Mexican treat, cooked with olive oil, chopped onions, garlic, red and green bell peppers, and chili powder served with whole-wheat tortillas, nonfat sour cream, salsa, and shredded low-fat mozzarella cheese. 

Italian
For a gourmet Italian pizza that is healthy and delicious, choose whole-wheat dough and top with pesto, goat cheese, Portobello mushrooms, sweet corn, slices of leftover rotisserie chicken and fresh basil.

Welcome to:


Yikes! Did you know next week is April? Two weeks until spring break! At least two weeks until spring break for my boys... Where has this year gone already? We are officially done with basketball. I was so proud of my oldest son, his team one first place in the championship last weekend! This was the first time playing for both of my kids and they did really well. Go Magic!! Out with basketball and in with baseball! This year my husband isn't coaching so I won't be spending quite as much time at the field raking and so forth but with two competitive little ball players I will probably be sporting a good tan by the time we are done in May. Just in time to move :)  Oh well, change is good.  Now if it will stop snowing so they can actually practice that will be helpful!

I am working through the last few link parties and posting the Fabulous Features! Thank you so much for being patient with me the last little while with my internet struggles and busy life with my kids and work, maybe one day I'll get it all figured out :) I appreciate you! Honey Wheat Breadsticks

This afternoon I posted my third recipe made with my brand new WonderMill as part of the Grain Mill Wagon Challenge! I am thrilled to be participating in this challenge.  I love making homemade fresh breads and I am loving making my own flour.  The WonderMill is amazing.  It literally takes only minutes to make your own flour.

This recipe has been a family favorite for years, I simply adapted it to use my freshly milled flour! I hope you give this recipe a try and let me know what you think :)

Great Idea Thursday's - 47

Welcome to:


Another week is almost over can you believe it? March is flying away and soon we will be fully into spring- Come on sunshine here we come! This week has been gray and full of rain clouds, definitely in like a lion. Last weekend was a great one for my family, we had a scout activity at the zoo: The Zoo Snooze. We spent the night at the zoo, got a behind the scenes tour, a special touch and feel program, and we even got to eat breakfast in the zoo and walk around before it was opened for the day. My boys had so much fun! If you have older kids, check and see if your local zoo has a similar program, you make memories that will last a lifetime. I hope I always remember the smiles on my boys's faces when they went to bed on Friday night, priceless :)

On another note, we have reached a new milestone and I just want to tell you how excited I am! Last week Great Idea Thursday's had 120 links!!! This is amazing and all because of you! Thank you so much for partying with me and Joy here @ A Handful of Everything! We love our readers and love the amazing posts you share every week. You are FABULOUS!!! Thank you! DIY Pomegranate Vanilla Milk Bath

Grain Mill Wagon Challenge: Delectable White, Whole Wheat, and Oat Dinner Rolls

For those of you who have been readers @ A Handful of Everything, you may remember that I have joined the Grain Mill Wagon Challenge! Making bread is therapeutic to me and there is little more I love than making bread for my friends and family. With my new WonderMill I am loving making my own flour and combining several different kinds of flour to make some great new recipes.

My post this week is exactly about that, mixing different flours and grains together to make an amazing homemade bread.

Green Jello Cake

This is one of my husband's favorite recipes passed on to me from my Mother-in-Law.  It looks great, tastes great, and as far as dessert goes, actually not too bad for you.  You can substitute any Jello flavor you want, we used green to celebrate St. Patty's day coming up, but you will want to use a strong flavor.  Cherry or raspberry work better than strawberry... Mix and match and come up with your own favorite combination. Although this does take awhile to set up, it does make this a great make ahead recipe!


Green Jello Cake

1 16.25 oz White Cake Mix
1 1/4 cups water
1/3 cup vegetable oil
3 whole eggs
1 3 oz green Jello (or favorite flavor:  cherry, raspberry work well)
2/3 cup boiling water
1/2 cup cold water, ice
1 3.4 oz Vanilla instant pudding and pie filling
2 cups milk
1 8 oz cool whip


Preheat oven to 325 F.  Assemble the ingredients and follow the directions for a 9x13 cake. Adjust the water, oil and eggs according to the directions on your cake mix.  I use the whole egg recipe. Bake as directed for 30-35 minutes.


Remove the baked cake from the oven to a cooling rack.  


Using a straw or a chop stick, poke holes over the entire surface of the cake about 1/2" -1" apart.


Boil 2/3 cup of water.  Meanwhile add a few ice cubes to a liquid measuring cup and add enough water to almost measure 1/2 cup.  Add the jello powder to the boiling water and stir until dissolved about 2 minutes. Add the ice water and mix well until all the ice is melted. Set aside for 5 minutes.  


*note: (I used the same small batter bowl that I measured the water and oil in, that's why there are little oil droplets on the surface of the jello in this picture)

Gently pour the jello evenly over the top of the cake.  If the cake starts pulling apart you can pour the jello slowly over the back of a spoon and it will land more softly.  Refrigerate for 2 hours.


In a mixing bowl combine the vanilla pudding powder and 2 cups of cold milk and beat for 2 minutes until thick.  Remove the cake from the refrigerator and evenly spread the pudding over the top.  
Let set for 5-10 minutes.

Spoon the cool whip on top of the cake.  Then using an offset spatula or knife, spread the cool whip as the final layer over the cake.  Refrigerate until ready to serve.  Chill any leftovers.



I love how you can see the layers all the way to the bottom.
