Family Favorite Buttermilk Pancakes

Pancakes are a popular request at my house.  We have them several times a week in one form or the other.  This is one of those go to recipes that is sure to please everyone at the table!

Family Favorite Buttermilk Pancakes

2 cups flour
1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1/4 cup sugar
2 eggs, slightly beaten
1 Tbsp canola oil
2 cups buttermilk
1 tsp vanilla

Preheat a griddle or skillet over medium heat.  Sift together the flour, baking soda, baking powder, salt and sugar into a mixing bowl.  


Add the eggs, oil, buttermilk and vanilla.  Stir to combine making sure to incorporate all the flour. When making pancakes it is important not to overmix or you will have rubbery pancakes instead of yummy pancakes.  


Spray pan with non-stick cooking spray and pour batter into about 4" circles.



  Allow to cook until bubbles are visible throughout the pancake, turn over and cook until golden brown.  



Serve with your favorite syrup or fresh fruit and powdered sugar. Makes about 24 4" pancakes.

Looks good! I've never tried to make pancakes tho. Always thought they wouldnt turn out right.

They are super easy! The first ones off the griddle might be funny but after that they should look and taste wonderful :)

There is a time and a place for "cheating" Sometimes all I'm up for is an "add water" kind of a day but if you have the extra 5 minutes it's worth it :)
This is perhaps one of the easiest homemade pancake recipes I've seen! I've always used Bisquick's recipe because I can't find a good homemade recipe that doesn't seem like a headache, but this one looks so easy I may just try it tomorrow.

Gotta love Sam's! It's a good deal and makes it easy especially when you make so many other fabulous things in the week. Enjoy your brinner however it comes :)
