I was watering my flowers this morning and when I looked up in my two hanging flower pots look what I found! Aren't they adorable? My neighbor has had nests in all 3 of her baskets but the House Finches have found their way over to my house now too :)
Whew! Playing catch up is crazy! Being out of the picture for a week sure makes a lot of work when you are back to the grind. I think it might just take me 2 hours to fold all the laundry piled up on my bed! lol

I was having a really hard time coming up with what I wanted to make for this Father's Day Blog Hop. Then I remembered some advice I got a long time ago: "The quickest way to a Man's heart is through his stomach!" So, I thought about the recipes that I make special for my hubby, I have a few different ones, but this is one of his most requested. This fabulous homemade quick bread is one that his Mom has made for years and one that I have adopted for our family too. It is always a hit and never lasts long! I hope that your Man loves this cinnamon bread as much as mine does!
1 cup canola oil
2 cups granulated sugar
3 large eggs
1 Tbsp vanilla extract
2 cups peeled and shredded raw zucchini (2 large zucchini's)
3 cups all purpose flour
1 tsp baking soda
1 tsp kosher salt
1 Tbsp ground cinnamon
1/4 tsp baking powder
Preheat the oven to 350 F. In a large mixing bowl or Kitchen Aid, combine the oil, sugar, and eggs.
Beat well. I use the small holes on a box cheese grater. You can use the bigger ones I like the small ones because the zucchini pieces almost completely disappear then my boys don't complain about green in their bread :)
Add in the vanilla and shredded zucchini and mix well. In a separate bowl sift the dry ingredients together: flour, soda, salt, cinnamon, and baking powder.
Add the dry ingredients to the wet in two additions and blend until all the flour is combined.
Pour the batter into 2 greased loaf pans.
Bake for about 60 minutes or until a tooth pick inserted in the center of the loaf pulls out clean. Let cool in the pans for about 10-15 minutes.
Then remove to a cooling rack to finish cooling completely.
Or slice with a bread knife and wonder what happened to the bread you just made!
After 5 minutes this was the only slice left. I had to hide the 2nd loaf for breakfast the next morning. I'm lucky I got a piece!
