Lion House Zucchini Bread

This post is part of the Sharing is Caring Father's Day Blog Hop hosted by: Life With Lovebugs and Powerful Mothering

I was having a really hard time coming up with what I wanted to make for this Father's Day Blog Hop.  Then I remembered some advice I got a long time ago: "The quickest way to a Man's heart is through his stomach!" So, I thought about the recipes that I make special for my hubby, I have a few different ones, but this is one of his most requested.  This fabulous homemade quick bread is one that his Mom has made for years and one that I have adopted for our family too.  It is always a hit and never lasts long! I hope that your Man loves this cinnamon bread as much as mine does!

Lion House Zucchini Bread

1 cup canola oil
2 cups granulated sugar
3 large eggs
1 Tbsp vanilla extract
2 cups peeled and shredded raw zucchini (2 large zucchini's)
3 cups all purpose flour
1 tsp baking soda
1 tsp kosher salt
1 Tbsp ground cinnamon
1/4 tsp baking powder

Preheat the oven to 350 F. In a large mixing bowl or Kitchen Aid, combine the oil, sugar, and eggs.

Beat well.  I use the small holes on a box cheese grater.  You can use the bigger ones I like the small ones because the zucchini pieces almost completely disappear then my boys don't complain about green in their bread :)

Add in the vanilla and shredded zucchini and mix well.  In a separate bowl sift the dry ingredients together: flour, soda, salt, cinnamon, and baking powder.

Add the dry ingredients to the wet in two additions and blend until all the flour is combined.

Pour the batter into 2 greased loaf pans.

Bake for about 60 minutes or until a tooth pick inserted in the center of the loaf pulls out clean.  Let cool in the pans for about 10-15 minutes.

Then remove to a cooling rack to finish cooling completely.

Or slice with a bread knife and wonder what happened to the bread you just made!

After 5 minutes this was the only slice left.  I had to hide the 2nd loaf for breakfast the next morning. I'm lucky I got a piece!

I don't know Miss Laney that's strange. Is it working on Bloglovin?
I must say that this is quite new to me. Baking breads with zucchini is not familiar here
I'm really curious and I'm pretty sure I'll be making this very soon :)

It's it fun all the things we do for our kids :) I hope she loves it!
Zucchini bread is always a favorite in my house. I like to have a slice for breakfast, tea time, snacks, dessert....pretty much anytime! I've never peeled the zucchini before for my recipe, does it change the taste of the bread? Thanks so much for sharing! -Monika

You don't have to peel the zucchini, I like to because of the texture. My little one is picky. So by peeling it the bread has less green, and has a more cake like texture. Really it's not that much of a difference, but if it makes my son eat it, I'm willing to take the extra minute to peel it :)
I ooove zucchini so this must be good!... =D It would be so cool if you could join my Link Party on Sundays (it's live now, until tomorrow midnight) and the Pin Hop on Thursdays if you would like to make some new friends =D.

Hope you are having a lovely day
