Family Favorite Buttermilk Pancakes

Pancakes are a popular request at my house.  We have them several times a week in one form or the other.  This is one of those go to recipes that is sure to please everyone at the table!

Family Favorite Buttermilk Pancakes

2 cups flour
1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1/4 cup sugar
2 eggs, slightly beaten
1 Tbsp canola oil
2 cups buttermilk
1 tsp vanilla

Preheat a griddle or skillet over medium heat.  Sift together the flour, baking soda, baking powder, salt and sugar into a mixing bowl.  


Add the eggs, oil, buttermilk and vanilla.  Stir to combine making sure to incorporate all the flour. When making pancakes it is important not to overmix or you will have rubbery pancakes instead of yummy pancakes.  


Spray pan with non-stick cooking spray and pour batter into about 4" circles.



  Allow to cook until bubbles are visible throughout the pancake, turn over and cook until golden brown.  



Serve with your favorite syrup or fresh fruit and powdered sugar. Makes about 24 4" pancakes.

This month for 12 loaves we are celebrating Berries! Since I have been on a Raspberry kick lately I decided to create yet another recipe featuring these wonderful little berries. I hope you enjoy this!  I was surprised how quickly it disappeared, next time I will double the batch :)

Bread Machine White and Wheat Pizza Dough

1 cup whole wheat flour
1 cup all purpose flour
1 1/2 cups bread flour - 2 cups
2 tsp kosher salt
1 Tbsp honey
1 Tbsp olive oil
1 1/2 cups water (100˚ F)
1 Tbsp bread machine yeast

Layer the ingredients in the order specified by your bread machine.  In mine I added the water, oil, honey, salt, whole wheat flour, all purpose flour, bread flour, and then yeast.  I like a softer dough so I only added 1 1/2 cups, if you prefer working with a firmer dough add the entire 2 cups of bread flour.

 

Select the dough cycle and press start.  When the machine beeps, check your dough ball to make sure that all the flour is completely incorporated.  Use a rubber spatula to make help it out and if necessary add a teaspoon or two of water if needed.


Allow the dough to complete the cycle.  It should be beautifully risen.  About 20 minutes before the end of the cycle turn on your oven to 450˚ F and preheat a stone.


Divide the dough into two halves.  Cover the dough you are not working with with a clean cloth.  


Flour your work surface and work the dough into a 12-15" circle.


Spoon on your favorite sauce and add topping.  
I like to sprinkle the entire top with freshly grated Parmesan cheese.


Transfer the Pizza to the hot stone and bake for 12-15 minutes until the cheese is bubbly and golden.  Prepare your other crust while baking.  Remove baked pizza with a pizza peel. Slice and see happy faces!  


Recipe makes 2 regular pizza crusts or 4 very thin crusts.

What A Handful of Everything is All About:

My name is Krista Low.  I am a Military Wife and I am the Mother of two fabulous boys.  I graduated with a BA in Management and Human Resources from Eastern Washington University.  I am active in Church, and I volunteer my time at my son's baseball league, at church, and with Cub Scouts.  I substitute teach at a Preschool which I love, I love getting together with my Book Club ladies and that I am blessed to be a stay at home Mom.

I created this blog in the fall of 2012.  I started because now that both of my boys are in school I felt the desire to do something productive with my time, but I still want to be able to stay at home and go on field trips with my kids and be home to send them to school and greet them when they get off the bus.  I love making dinner and sitting around the table as a family and going to baseball practice or gymnastics or soccer with my boys.  I love not working in the summer so we can go swimming and play outside together and make memories that will last a lifetime.  So, I knew that whatever I decided to do as my career needed to be from home at least until my boys are out of the house. The great thing about my blog is that I get to test the waters and try lots of different things and see where my talents are.  I love the comments I receive from my readers and visitors to let me know what you like too!  Because of this blog, I feel like I have value; that I  can be a positive influence in the world by offering a piece of myself to those who take the time to view it.

I am new to this fabulous Blogging Community but I am so excited to grow and learn more.  Keep the comments coming!!! Since I have started Blogging I have grown so much more confident in myself and I have loved browsing and getting to know other Bloggers through various Social Media that I really hadn't participated in until now.  I was missing out! I am grateful for the opportunity to participate in this Ultimate Blog Party and meet even more fabulous Bloggers.  Join me there!

5 stars: Love this book, I couldn't put it down. I highly recommend reading.

3 stars: Ok book.  It was worth reading but I wouldn't read it again.
2 stars: Not my favorite book.  I wouldn't buy it and I wouldn't recommend it.
1 star: Don't waste your time.
