Shrimp Pasta

For Dinner last night I wasn't feeling up to making a huge complicated meal so instead I went to a quick and easy pasta dish.  Ready in 20 minutes! If you are not a shrimp fan you can easily substitute chicken instead.

Shrimp Pasta

1/2 box spaghetti noodles
2 chicken bouillon cubes
olive oil
14 oz package of frozen cleaned and peeled shrimp, defrosted (or fresh)
1 garlic clove, pressed or minced
1 heaping Tbsp lemon juice
salt and pepper to taste
1/2-1 tsp Italian Seasoning

about 1/2 cup of Parmesan cheese, fresh is best

Bring a pot of water to boil with 2 bouillon cubes and 1-2 Tbsp of olive oil.  Add the noodles and cook as directed.


Meanwhile heat a large saute pan or stir fry pan over medium-high heat.  Add a Tbsp of olive oil and press the garlic stirring for a few seconds.  Add the shrimp, season with salt and pepper, add the lemon juice and stir.  The shrimp only take about 2 minutes to heat through so wait until the pasta is almost done before adding the shrimp.

Use a slotted pasta server to transfer the noodles directly into the wok with the shrimp.  Add about 1/4 cup of the cooking liquid to the pan.  Add the Italian seasoning and about 1/4 cup of the Parmesan cheese.  Stir until melted.  When fully incorporated add another 1/4 cup of cooking liquid and the other 1/4 cup of cheese.  Cook until the sauce is your desired consistency.   Transfer to a bowl and serve.  Garnish with more fresh Parmesan cheese.
