Peach Puffed Pancake

One of my boy's favorite breakfasts are Puffed Pancakes.  I had some frozen peaches so this was breakfast.  A little slice of heaven!

Peach Puffed Pancake

1 cup flour
3 Tbsp sugar
1/4 tsp salt
1 Tbsp butter
1 cup milk
3 large eggs

1 peach sliced or about 1 cup frozen sliced peaches, thawed (or more if desired)
1-2 Tbsp brown sugar
1 tsp cinnamon
1 Tbsp butter

Grease a 10" cast iron pan, place in the oven and Preheat to 425 F.

Combine the flour, salt, and sugar in a mixing bowl.  Melt butter.  Add milk, eggs, and butter to the dry ingredients and whisk, stirring until well blended.

Remove the pan from the oven and pour the batter into pan.  Bake at 425 F for 25 minutes or until puffy and golden brown.


Meanwhile heat a skillet over medium heat.  Melt butter.  Add the peaches, brown sugar, and cinnamon.  Stir occasionally until warmed through and sauce is slightly thickened.  Remove from heat.

Cut the pancake into wedges, spoon peach mixture over the top and sprinkle with powdered sugar or top with whipped cream.
